This green-tinted holiday only comes once a year, but these St. Patrick's Day cupcakes are worth whipping up all year long! From stout beer cupcakes with Irish cream frosting to rainbow-hued cupcakes, discover pint-sized sweets for kids and grown-ups alike!

Stout beer cupcakes with Irish cream frosting

Your favorite chocolate cake mix merged with your favorite dark beer and topped with sweet Irish cream make for a tasty St. Patrick's Day cupcakes for grown-ups only!

Cupcake ingredients:

  • 1 box chocolate cake mix
  • 1-1/2 cups stout beer
  • 1/2 cup vegetable oil
  • 3 eggs

Frosting ingredients:

  • 1 pound powdered sugar, sifted
  • 1/4 teaspoon salt
  • 1 stick butter, softened
  • 4 tablespoons Irish cream liquor or to taste

Directions:

  1. Preheat your oven to 350 degrees F.
  2. Combine the cake mix, stout beer and vegetable oil in a large bowl.
  3. Crack three eggs into a measuring cup and scramble. Add into the cake mixture and blend well until all lumps are removed.
  4. Fill the cupcake papers 2/3 of the way full and bake for 16 to 19 minutes, until a toothpick comes out clean when inserted and removed from the middle of a cupcake.
  5. Set aside and let cool.
  6. To whip up the frosting, combine the salt, butter and Irish cream with a hand mixer until fluffy.
  7. Gradually add in the powdered sugar and blend until smooth.

    Note^ When adjusting Irish cream to taste, be weary not to add too much or your frosting won't keep its shape!
  8. When cupcakes are completely cooled, pipe frosting on top of the cupcakes and serve to adults only!

  • 1 box white cake mix
  • 1 (3 ounce) package instant pistachio pudding mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 3 teaspoons white granulated sugar
  • 1/2 pint sour cream
  • Ready-made buttercream frosting
  • Green food coloring
  • Lucky marshmallow cereal (optional)

Directions:

  1. Preheat your oven to 350 degrees F.
  2. Combine the cake mix, pudding mix, sour cream, well-beaten eggs and oil with a hand mixer until lump-free.
  3. Fill the cupcake papers 2/3 of the way full and bake for 16 to 19 minutes, until a toothpick comes out clean when inserted and removed from the middle of a cupcake.
  4. Remove from the oven and cool completely.
  5. Tint the buttercream frosting with a couple drops of green food coloring and pipe onto the cupcakes when completely cooled.
  6. Top with marshmallow cereal pieces for a St. Patrick's Day cupcake your kids won't be able to resist!

This St. Patrick's Day cupcake recipe for tangy lemon cupcakes will tantalize your kids' taste buds, especially when rainbow sprinkles are too fun to resist!

Cupcake ingredients:

  • 1 box lemon cake mix
  • 3/4 cup oil
  • 4 eggs
  • 1 (3 ounce) box of lemon gelatin
  • 1 cup hot water
  • Juice of one medium lemon

Cream cheese frosting ingredients:

  • 8 ounce cream cheese, softened
  • 8 ounces unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pure almond extract
  • 4 cups (1 pound) powdered sugar
  • Rainbow sprinkles

Directions:

  1. Preheat your oven to 350 degrees F.
  2. Dissolve the lemon gelatin in 1 cup of hot water and cool.
  3. Combine the cake mix, oil, well-beaten eggs, dissolved gelatin and lemon juice until smooth.
  4. Fill the cupcake papers 2/3 of the way full and bake for 16 to 19 minutes, until a toothpick comes out clean when inserted and removed from the middle of a cupcake.
  5. Remove from the oven and cool completely.
  6. To create the perfect cream cheese frosting, blend the cream cheese, butter, vanilla extract and almond extract with a hand mixer on low speed until fluffy.
  7. Gradually add the powdered sugar into the mixture and combine until smooth.
  8. Pipe onto cooled cupcakes and sprinkle with rainbow sprinkles. To get a little extra creative, pipe the frosting on in billowy cloud textures to create your own little pot of gold at the end of your rainbow!

  • 1 box white cake mix

  • Store-bought vanilla frosting

Directions:

  2. Combine the cake mix, oil, water and well-beaten eggs until all of the lumps are removed.
  3. Divide the cake batter by the number of colors you wish your cupcake to don and place into individual bowls.
  4. Add two to three drops of food coloring to each bowl until you reach your desired hue.
  5. Spoon the colored batter, layer by layer, into individual cupcake liners until each liner is 2/3 of the way filled.
  6. Place in the oven and bake for 16 to 19 minutes, until a toothpick comes out clean when inserted and removed from the middle of a cupcake.
  7. Set aside to cool. (Tip: You can place the cupcakes in the fridge to cool if you're facing a time crunch!)
  8. Once completely cooled, pipe the vanilla frosting on the top of each rainbow cupcake and sprinkle with shades of sprinkles or sugar for a brightly-colored St. Patrick's Day surprise!
