Spring is in the air! Celebrate the return of warm weather with a group of friends and these three bellini recipes that are perfect for Easter brunch. From strawberry to mango, there is something to satisfy everyone.

Created by Harry Cipriani in 1948, the Bellini is a classic Italian cocktail that combines fruit puree and prosecco. The original version of the drink was made with white peach puree but any fruit can be used.

When making Bellini cocktails, keep in mind what fruit is in season and how sweet it is. While it is possible to use frozen fruit for the puree, it's not likely to taste as good as fresh fruit. Just because you can buy berries all year long doesn't mean they are going to be as deliciously sweet as they are in the summertime. If the fruit isn't as sweet as you would like, add simple syrup, a mixture of sugar and water, when making the puree.

You will want to pour the prosecco slowly because the fruit makes the prosecco effervesce more than normal. While the original Bellini recipe doesn't call for any garnish, it's fun to add a few pieces of fruit to the glass before serving.

Serving Tip^ If making Bellinis to serve a crowd for brunch, make a few different fruit purees and allow guests to make their own cocktail.

Fruit puree

Ingredients:

  • 1 cup fresh fruit of your choice (for the following recipes you will need raspberries, mango and strawberry)
  • 2 – 3 ice cubes
  • 1/2 ounce to 1 ounce simple syrup (if desired to sweeten fruit)

Directions:

  1. Thoroughly wash fruit and cut as required.
  2. In a blender, puree fruit, ice and simple syrup.
  3. For fruits with seeds, strain puree through cheesecloth or a strainer before using.

SERVES 1

Ingredients:

  • 2 ounces raspberry puree
  • Chilled prosecco
  • 3 raspberries

Directions:

  1. Add the raspberry puree to a Champagne flute.
  2. Slowly add the prosecco, stirring if necessary to mix the puree.
  3. Garnish with 3 raspberries on a skewer.

  • 2 ounces strawberry puree
  • Chilled prosecco
  • 1 strawberry

Directions:

  1. Add the strawberry puree to a Champagne flute.
  2. Slowly add the prosecco, stirring if necessary to mix the puree.
  3. Garnish with a strawberry.

  • 2 ounces mango puree
  • Chilled prosecco

Directions:

  1. Add the mango puree to a Champagne flute.
  2. Slowly add the prosecco, stirring if necessary to mix the puree.
