It's almost Earth Day! What a wonderful time to remind kids to not just take care of the earth, but to celebrate it! This Earth Day cupcakes recipe comes together quickly and easily, is fun to bake together and is sure to be a big hit with everyone!

Earth Day is a lovely time to remind kids to take care of the earth with clean up and service projects. It's also a great time to celebrate the beautiful place we live. When kids think celebration, they think cupcakes and we have to admit that we do, too! That's why we love these simple Earth Day cupcakes that are meant to be made with your favorite helpers. With a cake mix, a little food coloring and a great conversation, you'll be celebrating Earth Day in delicious style this year!

What you'll need

  • Your favorite white cake mix
  • Green and blue food coloring
  • Cupcake liners (white, green or blue would look lovely)
  • Birthday candles (white, green or blue would look lovely)

What you'll do

  1. Mix your cake mix to the package instructions.
  2. Divide the mix evenly into two bowls, making one bowl green batter with 12 drops of green food coloring and one bowl blue batter with 12 drops of blue food coloring. Mix each bowl of batter thoroughly.
  3. Prepare your cupcake liners by spraying them, then fill each one equally with green and blue batter. You can layer the two colors, swirl them with a knife or spoon the colors in. This gives lots of job options for your favorite helpers and the colors won't muddy!
  4. Bake the cupcakes to the package instructions.

Tips^ While the cupcakes are baking, consider having your kids share an Earth Day promise of how they'll help the earth. Once the cupcakes have baked and cooled, light a candle in each one and sing Happy Birthday to the earth. The kids can each blow out their own candles and you can enjoy the Earth Day cupcakes together while you calendar when you'll come through on your Earth Day promises!
