What better way to celebrate Cinco de Mayo than by adding a little spice to something already so wonderful: chocolate. This clever Mexican hot chocolate cupcakes recipe with creamy frosting is inspired by its namesake and is equally scrumptious — and spicy!

Ingredients:

  • Your favorite dark chocolate cake mix
  • 2 tablespoons cinnamon
  • 1-3 teaspoons cayenne pepper
  • Creamy frosting

Directions:

  1. Mix the cake mix to the package directions, adding in the cinnamon and cayenne pepper and blending the mixture well.
  2. Consider adding the cayenne pepper in just like you would with any other spicy food: 1 teaspoon will make your cupcakes mild, 2 teaspoons will make them medium and 3 teaspoons — our favorite! — will make them hot.
  3. Bake and cool your cupcakes, and then top them generously with a cool, creamy frosting to add to their sweet side and to cut the spice.

We love the sweet flavor and light texture of whipped frosting. If you prefer homemade, the recipe below is lovely.

Ingredients:

  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon vanilla

Directions:

  1. In a large bowl, beat the heavy cream until soft peaks begin to form.
  2. Add in the powdered sugar and the vanilla, beating the mixture after each addition and until your frosting thickens a bit and peaks begin to form.

One more thought^These cupcakes are perfection all on their own, but since you already have all of the ingredients on hand, consider serving them with the inspired original hot drink.
