Raw, green leafy vegetables, such as spinach and kale, are an important part of a balanced diet. They provide the body with much-needed nutrients, minerals and amino acids. They are also full of fiber, which helps eliminate toxins from our body and can reduce the risk of diseases such as diabetes and cancer.kale

Many of us don't eat enough raw, green leafy vegetables because they are traditional and only eaten in salads. And really, how many salads can a person consume in a week before they are bored?

Luckily there is another way to get your daily intake of these important foods. By blending green leafy vegetables into sweet or savory smoothies, your body gets all the benefits of the greens without you having to eat another salad. Plus, you can mix and match your ingredients, so every day you are drinking something new.

For my green smoothies, I like to use coconut water instead of other liquids because it is full of electrolytes and adds a great flavor to the drinks. If you don't like coconut water, try fresh squeezed orange juice, almond milk or regular water.

Make it fun for the kids and have them help you pick out the fruits and vegetables to blend. This will get them involved in the process and excited about green vegetables from an early age. If the green color makes the kids (or you) not want to drink it, pour the smoothie in a dark cup with a lid. That way, you don't see what you are drinking, and instead, you focus only on how great it tastes.

Serves 1

Ingredients:

  • 1 mango, cut into slices
  • 3 kale leaves, rinsed (remove center stalks if desired)
  • Juice from half of a lime
  • Coconut water
  • Ice

Directions:

  1. Place kale, mango and lime juice in a blender.
  2. Add coconut water and ice.
  3. Blend to desired consistency, adding more coconut water as needed.

Ingredients:

  • 3 lettuce leaves, rinsed
  • 4 or 5 strawberries, rinsed
  • 1 banana, peeled
  • Coconut water
  • Ice

Directions: 

  1. Place lettuce, strawberries and banana in a blender.
  2. Add coconut water and ice.
  3. Blend to desired consistency, adding more coconut water as needed.

  • 1 cup spinach leaves, rinsed
  • 1 pear, sliced
  • 1/2 cup raspberries, rinsed
  • Coconut water
  • Ice

Directions:

  1. Place spinach, pear slices and raspberries in a blender.
  2. Add coconut water and ice.
  3. Blend to desired consistency, adding more coconut water as needed.
