It's summer and the livin' is easy! In this summery treat, we're taking the classic strawberry shortcake and freshening it up and making it portable. We've made some simple changes and we're certain you'll love these ice cream sandwiches as much as we do.

Long summer days just beg for the classic family favorite, strawberry shortcake. But time spent inside, assembling an after-dinner treat, could be better spent outside, soaking up those warm summer evenings. With no fussy ingredients and no-hassle assembly, you won't be trapped in the kitchen! Make these shortbread and strawberry ice cream sandwiches ahead of time so that later, you can run inside just long enough to grab some from the freezer and quickly get back outside to the fun!


  • Shortbread cookies (This recipe is our family's absolute favorite, but store-bought shortbread cookies are also a great option and cut down on the prep time significantly.)
  • Strawberry ice cream (Haagen-Dazs is my personal favorite because the texture is so smooth and creamy that it squishes well and the chunks of sweet strawberries are just perfect.)


  1. Make a fresh batch of shortbread cookies, and allow them to cool completely.
  2. Once cooled, put them in a freezer bag and place them in the freezer so that they’ll be nice and firm when you squish the ice cream between them during assembly.
  3. Remove your strawberry ice cream from the freezer and allow to soften for a few minutes on the counter.
  4. Using a melon baller or a small ice cream scoop, scoop out a few small balls of ice cream and place on the underside of 1 shortbread cookie.
  5. Top with another shortbread cookie and squish firmly (and evenly), but gently, until the ice cream reaches the edge of the cookies.
  6. Return to the freezer for at least 30 minutes to firm up before serving.
  7. These will keep well for up to a week if wrapped carefully.
