If you've looked at a dessert menu recently, you've undoubtedly spotted at least one fantastic creation that includes salted caramel. We've taken this hot flavor and put it between two cold cookies to create what we're certain will be your new favorite dessert!

One of the hottest dessert trends over the past couple of years has been to add salted caramel to... well, to anything, really. Whether it's brownies, cake, cookies or ice cream, salted caramel is getting its much-deserved moment in the dessert spotlight.

We're sandwiching salted caramel gelato between two double chocolate cookies and the end result is beyond fantastic.

Chocolate chocolate chunk cookies

Makes 60 small cookies

  • 2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup dark chocolate chunks


  1. Preheat the oven to 350 degrees F.
  2. Beat butter, sugar, brown sugar and vanilla extract in a large mixing bowl until creamy, roughly 2 minutes.
  3. Combine flour, cocoa, baking soda and salt in a medium mixing bowl.
  4. Thoroughly beat in 1 egg at a time.
  5. Gradually add in flour mixture, beating thoroughly after each addition.
  6. Stir in the dark chocolate chunks.
  7. Drop by slightly rounded tablespoons onto ungreased baking sheets.
  8. Bake for 9 to 10 minutes or until cookies' centers are set but still soft. Pull cookies from oven a bit sooner than you typically would to ensure that they're soft.
  9. Let sit on baking sheets for 2 minutes and then move to wire racks to cool completely.
  10. Place cookies in a freezer bag and move to the freezer to help firm them up a bit before assembling the ice cream sandwiches.

  • Chocolate chocolate chunk cookies
  • Salted caramel gelato (our favorite brand is Talenti because it is ridiculously smooth and creamy, making it great to work with)
  • Hardening chocolate coating (either Magic Shell or a homemade version)
  • Chocolate jimmies


  1. Using a melon baller or small ice cream scoop, scoop out 2-3 scoops of the gelato and place on the underside of 1 cookie, and then top with another cookie.
  2. Firmly but gently, press cookies together until the gelato reaches the edge of the cookies.
  3. Repeat with desired number of cookies and return to the freezer for roughly 30 minutes.
  4. Remove from freezer and dip into chocolate coating, then into chocolate jimmies and return to freezer until set.
