There is nothing better than fresh basil and tomatoes from the garden for an easy and flavorful lunch or dinner. Add in some fresh mozzarella cheese and you've got yourself one fantastic mini meal!

Head on outside to your garden or local farmers market and grab some delicious in-season tomatoes and basil for a quick and easy lunch or dinner. You can use any type of tomato for this recipe: vine-ripened, plum tomatoes or even colorful heirloom tomatoes. Splurge and grab the fresh mozzarella instead of processed packaged mozzarella at the store. Your taste buds and family members will thank you.

Mini fresh basil and tomato sandwiches

Serves 4

Ingredients:

  • 8 slices small sliced Tuscan bread
  • 4 vine-ripened tomatoes, sliced
  • 1 cup torn fresh basil leaves
  • 6-8 ounces fresh mozzarella, thinly sliced
  • Extra virgin olive oil
  • Kosher salt and freshly ground pepper

Directions:

  1. Lay out small slices of bread on a large board. Drizzle each slice of bread with a generous amount of olive oil.
  2. Evenly divide the slices of mozzarella on 4 slices of bread. Repeat with sliced tomatoes and torn fresh basil leaves.
  3. Season with salt and pepper.
  4. Top each bottom half of sandwich with second slice of bread.
  5. Serve and enjoy!

  • Cut out small circles of the bread to make bite-size sandwiches for an appetizer.
  • Grill slices of Tuscan bread on grill to make a warmer sandwich.
  • Build your mini fresh basil and tomato sandwiches and toss onto a panini maker to make grilled cheese!

Rachel's suggested wine pairing


My favorite wine pairings with a Caprese-style sandwich or salad are Italian wines. Greco di Tufo is a dry, crisp and medium-bodied white wine from Italy full of character and flavor with enough acidity to pair nicely with fresh tomatoes. Also try a Verdicchio from Italy. Verdicchio is a white wine with noticeably high acidity that can come across on the palate with citrus notes, perfect to pair with a Caprese-style sandwich or salad. A dry, crisp sauvignon blanc or dry rosé wine would also pair nicely with this recipe.
