A person can eat the same salad only so many times before they can no longer look at a piece of lettuce. Lucky for you, we have a new salad creation that will get you rethinking that bowl of greens. This mixed green salad with juicy clementines, pistachios and creamy goat cheese is perfect for lunch or as a side dish to a meal. Plus, it's also really tasty — which isn't something people always say about salad!

Salad is not usually our first choice when hunger strikes. But, it doesn't have to be that way. This mixed green salad with clementines, pistachios and goat cheese has a wonderful combination of flavors that is sure to excite the taste buds. Plus, it only takes minutes to put together.

When it comes to salad dressing, I prefer to use infused olive oils and balsamic vinegars rather than actual salad dressings. Two of my favorites are blood orange olive oil and dark chocolate balsamic vinegar that I buy from a local olive oil store. They are magical in this salad (and almost every other salad I eat at home). Regular olive oil and balsamic or Champagne vinaigrette would also work for this salad if you're not up for trying the fancy infusions. Either way, we are sure you'll be happy sitting down to a bowl of this mixed green salad.

Mixed green salad with clementines, pistachios and goat cheese

Serves 4

Ingredients:

  • 4 cups mixed baby greens
  • 2 clementines, peeled, sectioned and cut in half
  • 1/4 cup chopped pistachios
  • 2 ounces goat cheese, crumbled
  • Infused olive oil and balsamic vinegar or Champagne vinaigrette

Directions:

  1. Add mixed greens, clementines, pistachios and goat cheese to a large salad bowl.
  2. Drizzle olive oil and balsamic vinegar or Champagne vinaigrette on top and toss to combine.
  3. Serve immediately and enjoy!
