These make-ahead baked eggs are perfect for a special holiday breakfast or as an easy option on school mornings. They’re packed with turkey sausage and gooey cheddar cheese.

On those lazy weekend mornings when you want to hang out in your pajamas for hours while enjoying a hot and satisfying breakfast, this baked egg recipe comes in handy. Most of the recipe, including cooking the turkey sausages and whisking the eggs, can be done the night before. All that is left to do in the morning is combining the ingredients and baking.

These are also a great option for busy school mornings. However, if 20 minutes of baking time doesn't fit into the morning routine, cook these baked eggs the night before and reheat them in the microwave in the morning. Your family will welcome the change from cold cereal or toast.

Make-ahead sausage & cheddar baked eggs

Serves 4


  • 6 turkey breakfast sausages, cut into 1/2-inch pieces
  • Pinch of salt and pepper
  • 8 large eggs
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/2 cup grated cheddar cheese
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons minced flat-leaf parsley


  1. Preheat oven to 400 degrees F.
  2. Lightly coat a large skillet with cooking spray. Cook the sausages until browned and cooked through. Transfer to a paper towel to drain.
  3. Coat 4 (6 ounce) ramekins with nonstick cooking spray or grease with butter. Divide the cooked sausages between the ramekins.
  4. In a large bowl, whisk together the eggs and water. Divide the mixture between the ramekins, pouring over the sausages. Divide the cheddar cheese evenly between the ramekins.
  5. Place the ramekins on a baking sheet and place in the oven. Cook until the eggs are set, about 20 minutes. A few minutes before the cooking is done, sprinkle the eggs with Parmesan and place back into the oven. Garnish with parsley and serve.
  6. Remove from the oven, transfer the ramekins to plates and serve immediately.

Make Ahead^ The night before, cook the sausages and prepare the egg mixture. Place the sausages in the prepared ramekins. Cover and chill the ramekins and the egg mixture. In the morning, pour the egg mixture over the sausages, sprinkle with the cheddar cheese and bake as directed.
