Spice up your lunch with a southwestern take on veggie wraps. Crunchy bell peppers, sweet corn, black beans (and a few other tasty ingredients) all stuffed inside a tortilla along with chipotle cream cheese. Yes, they are as good as they sound and we do know that your mouth is watering. You're welcome.

Lunch doesn't have to be time-consuming to put together. Instead it can be simple and flavorful — and we'll prove it to you with these delicious southwestern veggie wraps with chipotle cream cheese. Other than chopping veggies, mixing the cream cheese and rolling up the wraps, there's no work involved. And you won't have to step foot near the stove. Can't beat that for an easy summer lunch.

Southwestern veggie wraps

Serves 4


  • 4 flour tortillas or flatbread wraps
  • 1/2 cup chipotle cream cheese (recipe below)
  • 1 (15 ounce) can whole black beans, drained
  • 1 (15 ounce) can sweet corn, drained
  • 1 red bell pepper, stem and seeds removed and chopped into small pieces
  • 1 orange bell pepper, stem and seeds removed and chopped into small pieces
  • 1 to 2 avocados, cut into small pieces
  • 2 cups baby spinach leaves
  • 1/2 cup cilantro


  1. Lay tortillas or flatbread wraps on a flat surface. Spread a thin layer of chipotle cream cheese on each, leaving a 1 inch border around the outside.
  2. Top with black beans, corn, bell peppers, avocado, spinach and cilantro.
  3. Carefully roll the tortillas or flatbread wraps and cut into 2 or 4 pieces. To help the wraps from falling apart when serving, insert a toothpick in the middle of each section. Enjoy.

Chipotle cream cheese

Makes 1/2 cup


  • 4 ounces cream cheese
  • 1 to 2 chipotle peppers in adobo sauce, cut into small pieces
  • 1/2 tablespoon adobo sauce from the chipotle peppers


  1. Add all ingredients to a small bowl and mix until combined.
  2. Store in the refrigerator until ready to use.
